Laurie’s Shrimp Scampi

Ingredients:

  • 1 (1.1 oz) package Laurie’s Kitchen White Wine Garlic sauce mix
  • 1 cup water
  • 1 tbsp. butter or spread
  • 2 lbs. peeled and deveined shrimp (small to medium size)
  • 3 tbsp. olive oil (divided)
  • ½ lb. angel hair pasta
  • 1 cup fresh spinach

Directions:

  • Heat water as directed for pasta. 
  • Pat shrimp dry with a paper towel. 
  • In a large skillet, heat 1 tablespoon olive oil over medium heat. 
  • Add shrimp and cook approximately 2 minutes on each side. 
  • Add water and butter. 
  • Stir in Laurie’s Kitchen White Wine Garlic sauce mix and simmer for 3-5 minutes. 
  • Add pasta to water and cook. 
  • Drain well and toss pasta with spinach and remaining olive oil, season with salt and pepper. 
  • Serve shrimp scampi over pasta. (serves 4)
