Laurie’s Shrimp Scampi
Ingredients:
- 1 (1.1 oz) package Laurie’s Kitchen White Wine Garlic sauce mix
- 1 cup water
- 1 tbsp. butter or spread
- 2 lbs. peeled and deveined shrimp (small to medium size)
- 3 tbsp. olive oil (divided)
- ½ lb. angel hair pasta
- 1 cup fresh spinach
Directions:
- Heat water as directed for pasta.
- Pat shrimp dry with a paper towel.
- In a large skillet, heat 1 tablespoon olive oil over medium heat.
- Add shrimp and cook approximately 2 minutes on each side.
- Add water and butter.
- Stir in Laurie’s Kitchen White Wine Garlic sauce mix and simmer for 3-5 minutes.
- Add pasta to water and cook.
- Drain well and toss pasta with spinach and remaining olive oil, season with salt and pepper.
- Serve shrimp scampi over pasta. (serves 4)
