Angel Hair Pasta with Roma Tomatoes and Fresh Spinach

This dish can be served as the side dish, or as an entrée with grilled salmon, chicken or shrimp.

Ingredients:

  • 1 (1.1 oz) package Laurie’s Kitchen™ White Wine Garlic Sauce Mix
  • 1 cup water
  • 2 Tbsp. butter or spread
  • 8 oz. angel hair pasta
  • 4 Roma tomatoes (quartered)
  • 1 cup fresh spinach (chopped)
  • 3 Tbsp. extra virgin olive oil (divided)
  • Grated Parmesan cheese (as needed)
  • Salt and Pepper (as needed)
  • Grilled salmon, chicken or shrimp (optional)

Directions:

  • Prepare water for pasta as directed.
  • Heat 1 Tablespoon extra virgin olive oil in a medium-sized skillet over medium heat.
  • Add quartered tomato and cook until soft (about 2 minutes). 
  • Add water and butter.
  • Stir in Laurie’s Kitchen™ White Wine Garlic Sauce Mix and reduce heat to low. 
  • Simmer 3-4 minutes.
  • While sauce is simmering, cook pasta and drain.
  • Add spinach and remaining extra virgin olive oil to sauce mixture.
  • Toss in drained pasta and season to taste.
  • Garnish with grated Parmesan cheese. (serves 4)
