Angel Hair Pasta with Roma Tomatoes and Fresh Spinach
This dish can be served as the side dish, or as an entrée with grilled salmon, chicken or shrimp.
Ingredients:
- 1 (1.1 oz) package Laurie’s Kitchen™ White Wine Garlic Sauce Mix
- 1 cup water
- 2 Tbsp. butter or spread
- 8 oz. angel hair pasta
- 4 Roma tomatoes (quartered)
- 1 cup fresh spinach (chopped)
- 3 Tbsp. extra virgin olive oil (divided)
- Grated Parmesan cheese (as needed)
- Salt and Pepper (as needed)
- Grilled salmon, chicken or shrimp (optional)
Directions:
- Prepare water for pasta as directed.
- Heat 1 Tablespoon extra virgin olive oil in a medium-sized skillet over medium heat.
- Add quartered tomato and cook until soft (about 2 minutes).
- Add water and butter.
- Stir in Laurie’s Kitchen™ White Wine Garlic Sauce Mix and reduce heat to low.
- Simmer 3-4 minutes.
- While sauce is simmering, cook pasta and drain.
- Add spinach and remaining extra virgin olive oil to sauce mixture.
- Toss in drained pasta and season to taste.
- Garnish with grated Parmesan cheese. (serves 4)
