Laurie’s Baked Chicken Parmesan Puttanesca

Ingredients:

  • 1-1.4 oz. packet Laurie’s Kitchen™ Puttanesca Sauce Mix
  • 1 can crushed tomatoes
  • 4 boneless skinless chicken breasts
  • 2 cups mozzarella cheese
  • ½-cup grated Parmesan cheese (divided)
  • 8 oz. spaghetti (cooked as directed)

Directions:

  • Preheat oven to 350 degrees F
  • Cut chicken breasts in half crosswise and pound to ½ inch thickness. 
  • In an 8X8-baking dish or similar sized dish, pour in the crushed tomatoes. 
  • Stir in the Laurie’s Kitchen™ Puttanesca Sauce Mix and ¼ cup of Parmesan cheese. 
  • Add chicken breast turning, to coat with sauce. 
  • Cover with foil and bake 30 minutes. 
  • Meanwhile, cook pasta as directed. 
  • Remove foil from dish and top with remaining Parmesan and mozzarella cheese. 
  • Continue to bake until cheese is melted and bubbly. 
  • Serve over cooked spaghetti. (serves 4-6)
