Laurie’s Baked Chicken Parmesan Puttanesca
Ingredients:
- 1-1.4 oz. packet Laurie’s Kitchen™ Puttanesca Sauce Mix
- 1 can crushed tomatoes
- 4 boneless skinless chicken breasts
- 2 cups mozzarella cheese
- ½-cup grated Parmesan cheese (divided)
- 8 oz. spaghetti (cooked as directed)
Directions:
- Preheat oven to 350 degrees F
- Cut chicken breasts in half crosswise and pound to ½ inch thickness.
- In an 8X8-baking dish or similar sized dish, pour in the crushed tomatoes.
- Stir in the Laurie’s Kitchen™ Puttanesca Sauce Mix and ¼ cup of Parmesan cheese.
- Add chicken breast turning, to coat with sauce.
- Cover with foil and bake 30 minutes.
- Meanwhile, cook pasta as directed.
- Remove foil from dish and top with remaining Parmesan and mozzarella cheese.
- Continue to bake until cheese is melted and bubbly.
- Serve over cooked spaghetti. (serves 4-6)
